I had a craving for cookies, couldn't decide what kind. Outta chocolate so thought I'd look in a recipe book for some inspiration. Ended up making some from a cook book my grandma gave me for my birthday the year I graduated high school. I was looking at the front of the book right before I started to post this and noticed my grandma got the book the year I was born. So it's been around awhile ;)
From The Cookie Jar
Pineapple-Raisin Cookies
1 cup firmly packed golden brown sugar
1/2 cup soft butter
1 egg
1 teaspoon vanilla extract
1/2 cup raisins
3/4 cup canned crushed pineapple, undrained
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts(optional)
1. Combine brown sugar, butter, egg and vanilla extract in mixing bowl Beat until fluffy.
2. Add raisins and pineapple; mix thoroughly.
2. Combine flour, baking powder, baking soda, and salt; add to the creamed mixture and mix well. Stir in nuts.
4. Drop the mixture by spoonfuls 2 inches apart on greased cookie sheets.
5. Bake at 375F 12-15 minutes.
makes about 4 dozen cookies
We made 2 batches today-both yummy. The first batch was nice and fluffy the second one not so much. Though that was probably due to human error as by the second batch things get kind of crazy around here with babies fussy and kids impatient to try out the cookies-LOL!
Also I probably made mine bigger than the recipe called for so had to cook them a little longer.

This and that
We said good bye (for now) to some friends Saturday. They are headed out to the east coast for awhile. Was going to post of a picture of the kids with them but I'm working on the hubby's computer for now and he has a whole different picture program than I do and I'm not finding the easy button(aka fix red eye here)-how's that for a really long sentence! If little bit ever gives me more than half a second maybe I can play around with that a bit.
We made some yummy cookies today. I had thought to make some yesterday so we could send some with our traveling man but it didn't make the cut. Too bad guess we'll have to eat them all! I actually baked half and rolled the other half up in plastic wrap(like a log) and put in a freezer bag. So next time we want to make some we just take out and slice and bake. This is the first time I've tried this trick so I'll let you know how it works. Here is the recipe we tried. Borrowed it from a friend who raved about it. I can't follow a recipe so I used rice flour instead of all purpose, not as much sugar and was out of nuts...but it was basically the same, right? LOL

cookie baking season
We had our first 'cookie marathon' last Saturday. Made two batches of sugar cookies and one batch of chocolate chunk cookies. Yum Yum!!

Yes, the only icing on hand was pink. The pumpkins and leaves tasted good no matter what color they were!

Another swim lesson day. #4's first day. I am such a nervous wreck on swim lesson days...I know these are highly qualified ladies teaching our kids...but the water is so deep and I'm so far away....must release the control issues.....
So everyone survived another day of lessons ;) Today was a Safety day in which they went over rules and skills in which they could help someone in the water even if the lifeguard wasn't around.
Yes, the pictures are from a distance. I need to stay back, so I don't become that parent.

#4 jumped off the diving board twice. I was glad to see a bit of caution in the boy. He is a busy, adventurous boy in general!
